    “Belmuz” is a specialty from the mountainous parts of Eastern and South-Eastern Serbia from Negotin to Pirot. There is no an exact recipe for this dish since everybody has his own recipe. This dish is made of young cow or sheep full fat milk – the best one is one day old and unsalted.
1 kg of young cow or sheep cheese melt in a pot on low temperature with occasional stirring until the cheese is completely melted (completely liquid as milk) and the fatness is separated). Then at about one cup of white corn flour, salt it a bit and stir it continuously with wooden ladle for 10-15 minutes. When “belmuz” starts turning around the pot it is done – you can remove it from the stove and serve.
